For me one of the easiest ways to prepare fish is to sear it in a cast iron skillet. Mahi mahi steak is one. It can get quite dry so I devised a rich and savory sauce to help it along.
It is just a recipe that I conceive in my head with the ingredients that I have. With some out of the box technique only a very small amount of butter is needed to pan fry the mahi mahi. I use whipping cream to make the sauce. I know a lot of people will loss their wit hearing that this dish is made with butter and heavy whipping cream. As in anything good, moderation is key. Just call it French inspired.
