I went to Thibodaux and happened upon this restaurant called Fremin's in the beautifully restored old drug store building.
the inside and outside are dressed to kill; the prices on the menu are quite reasonable
the baguette is served in the paper bag and was very good
i had a smoked duck gumbo and it is quite good
for the main course i order the stuffed flounder; unfortunately it was poorly prepared; the cook put way too much lemon juice in it so the sauce is over the top sour; worst is the bottom of the flounder is burnt so bad that it was charred black; i nearly wanting to send it back to the kitchen
i spent the night in the quiet town of Thibodaux
this is the downtown main street
you don't see old world business like this too often
many historic buildings are being restored

that morning i went to find Bourgeois Meat Market that i planned to visit
it was very early and there were local and out of state customers; you can tell most were regulars
the prices are very reasonable
the owner is very friendly and offer me a sample of everything I asked about; his country headcheese is one of the best headcheese I'd ever tasted; full of rich flavors
now this is a porter house - i bought a cut to take with me to cook later
the beef jerky is excellent
i cannot say enough good things about his products
i bought this boudin for breakfast
OMG! i had no idea boudin can be so good
next i visited a smaller plantation

it was very common to have a separate building that served as the kitchen because of the hot climate as well as for fire harzard
i could not have enough of this beautiful kitchen

he is so handsome
