road trip - spring 2014, part 11
This is the eleventh installment of the series of post on a road trip during the spring of 2014. I woke up with a cold sweat last night. I realize if I don't grab my blogging by the hone (think unicorn) my series of the recent road trip will never finish.

more fish tacos
I have been eating a lot of fish tacos lately. It is amazingly easy to make. I have scored some very good fish from Trader Joe's. I also been cooking with parsnips. What a wonderful root vegetable.

tacos with belgian chocolate mole
Whenever I engage in a home project the meals usually have to take a back seat. The recent project is the cassette toilet conversion for Tatyana. I skipped the weekly grocery shopping trip and have been eating from the refrigerator and the freezer. I did make a quick stop at Trader Joes running an erant and I picked up a few essentials including a pack of Belgian Chocolate which I want to make mole with.

tacos with homemade mole
Writing about my first attempt making taco got me fired up this morning. It is soggy outside and I have all the ingredients. No better day to try my hand in making mole. I had been very curious with what Mexicans do with these dried ancho (also called poblano) peppers. Watching Pati's Mexican Table I learnt the basics of making mole. It turns out to be very simple.
taco, taco, and more taco
I had never tried making taco. Like a lot of people I ate plenty of bad ones at fast food places that are nothing like taco Mexicans eat. I only had real taco once in a restaurant that specialized in wood fired food including pizzas. I had fish tacos for the first time and they were so delicious.
