mexican rice

I made this approximation of Mexican rice. Very simple with no fuss. 

I used the vegetable that I have on hand - onion, garlic, and tomato

annatto seed

smoked paprika, cumin, and annatto seeds

the annatto seeds were so old it impart very little orange color, but the paprika and tomato came to the rescue; I use Basmati rice for texture

grilled steak with a side of Mexican rice

topped with char siu
