pickled vegetable stall - most of these are ago old family business and the quality are generally unparallel
still more seafood stalls - many of them sells whale meat too
you are welcomed to sample the pickled vegetable - as long as you don't act like tourist and sample them like free for all

again kyoto travel sites love to show a picture of fermented eggplant (or a similar squash-like vegetable); i think the yellow paste is wine lee from making sake

Kyoto is a very expensive city to live in. Everything in Nishiki market is so expensive with reference how little we spend on food in the United States.
I have been to markets in smaller cities in Japan and the prices there are much much lower.
