tonkatsu

I was in Japan in April 2010. The trip was well timed as I got to see the cherry blossom.

While in Tokyo I visited the Tonki which is famous for it's tonkatsu (fried pork cutlets).


Tonkatsu is one of many Japanese dishes (like Japanese curry, and many pastries and cakes) that was adapted from the West but localized to the people's tastes. I have not met a Japanese expat that does not crave it.

 If you like food Tonki is a place worth visit for it's unique decor, the very specialize small menu, the local clients, and most of all the interesting characters of what I believe a 3 generations of family staff.

coming home I made a similar ones inspired by the presentation and taste of them.

another meal - this time i prepared the must-have condiment, a good dash of oriental hot mustard
over the years i had no luck finding good oriental hot mustard - until i found this
Oriental hot mustard is very different from western mustard. It is quite hot and quite similar to wasabi. In fact most wasabi used in not so high end sushi places are hot mustard colored green to simulate real wasabi. Real wasabi is quite expensive, even in Japan. Oregon produces a lot of wasabi, including exporting to Japan.

also tonkatsu should be eaten with a bowl of good short grain japanese rice
