stir fry of grouper and celery - 斑片炒西芹

If you are a foodie that like Chinese food you would enjoy the endless variety of casual entrées called 少菜.They are affordable and represents some of the best of Chinese cooking.

This dish is very simple. It is made with grouper and celery. Like most casual entrées 少菜 it is intended to be eaten with a bowl of white rice.

While the dish is supposed to be made with filet of a large grouper, due to over fishing large grouper is hard to find as well as not environmentally conscious this days I substitute with Pacific ling cod.
this piece is from a freshly killed live ling cod from my fish monger

i trimmed out the bones

remove the skin (save for deep frying as snack)

marinade with dash of light soy sauce, white pepper, and oil (left before, right after)

stir fry with a bit of soy sauce and oyster sauce and salt - there are also ginger slices and scallions in there

as for the skin i just deep fried them as snack with salt and ground pepper - delicious
