Having just returning from Thailand I am eager to put my trip experience to the test. This are few Thai meals that I made recently.
This is my first attempt making Thai hot and sour soup (sort of tom yum goong) with seafood. With out whole prawns (with head intact) I add other seafood to make up of the loss of taste without the shrimp head.
some of the ingredients - i didn't take photos of all of them
dungeness crab meat
the thai eggplants are not in season and has very hard seeds - i didn't use them
the reward
eat with a bowl of plain rice
eat with hot and spicy fried chicken wings with fish sauce in another meal
hot and spicy fried chicken wings with fish sauce- it is hard to capture a photogenic dried chicken without a good lighting setup; the photo results in them looking too charred while they are not in reality
one thing i notice in Thailand the soup noodles very often are of smaller servings; so too are most meals common people eat for lunch at a casual places like in this photo
i now often do the same; this is braised beef shank with rice noodles
my first attempt at papaya salad - i didn't have a variety of other vegetable on hand but nonetheless it tasted amazing; i let the green papaya sat for a week so it is a bit too ripe; i used only the harder part around the outside and discard the somewhat ripen interior
thai basil pork - also my first attempt; it is amazing easy to make and it smells and tastes OMG
a complete healthy meal
this is another rendition of hot and spicy soup with seafood
bits of cuttle fish
i adhered to common modest Thai serving - plenty of basil pork save for another meal
Having a broad background in Chinese cuisine Thai cooking is relative easy for me to pick up. The techniques have a lot of commonality and I can often figure out the recipe by taste - something I tend to do when pressed on time. One important key to Thai cooking is the strong emphasis on balancing the taste of the "seasoning".
even the person eating the meal is encouraged to tweak the taste with the condiment set
here are a collection of condiment sets i saw in thailand
self-serve basket of fresh vegetable
self-serve water and ice
i like this one best - it is most unique; it is in a casual noodle shop with minimalist decor all designed and built by the young owner
protect by a flyscreen
