a steamed live grouper 蒸石斑


On the same day that I went to the East side and bought the eel, I also bought a live grouper.


I prepared it the classic Cantonese way, by steaming it. It weights in 1 lb 6 oz before cleaning so it is a a medium one for this kind of grouper found in Portland, OR.

i brought back this stainless steel oval dish from Bangkok just for this purpose - the fish (notice I have to curve the fish slightly to make it fit) and the plate just barely fit in my biggest thai steamer; the reason for the special purpose stainless dish is it cooks the bottom side evenly due to better heat transfer than a ceramic plate
