Scallion pancake 蔥油餅 has become my regular fares now. It is so easy to make and great substitute for bread or rice. I refined the procedure and found the techniques that make this simple snack great.
I had written before that the best scallion pancake 蔥油餅 was one that I had while in Guangzhou 廣州. Not anymore. The best are now ones that I recently made.
sometimes the shape after rolling out into a thin sheet does not look uniform but it is fine as long as it occupies most of the surface of the cast iron skillet
